Food trucks include CocoRays and Grandes Chimis of Lawrence, Meanie Panini of Methuen, and The Food Train and Spiceventure of Lowell.
For CocoRays owner Raymond Gonzalez, operating at the food truck park could help increase the success of his business in the city. The park’s location could bring “insane” foot traffic, he said.
“It’ll bring more community involvement because it’s downtown, so I’ll get to interact with more people in my community,” the Lawrence resident said.
Gonzalez has been operating CocoRays, a truck featuring “Mexican cuisine with a Puerto Rican touch,” for just more than a year. During lunchtime, he’s often found in a parking lot at Lawrence General Hospital from 10:30 a.m. to 2 p.m., before the truck moves to Lawrence Street by O’Neill Park from 6 to 9:30 p.m.
